Mouth-watering Chicken Pie, my passion

For my post of the day, I will like to share on the poem If by Rudyard Kipling. It was indeed inspiring to admire this great piece of work! Though I am not such a fan of any language literature but yet this deserves a breathe-holding moment as I was drown in my deep thoughts.

I will like to quote from the first and second line of the second staza that
If you can dream—and not make dreams your master;   
    If you can think—and not make thoughts your aim; 
 
I have always dreamt that one day, I will run a business with a cosy interior of my own. To most of you, this may seem far from reality but yes, I believe that nothing is impossible if you have the will and the perseverance to keep rolling :) Many will choose to hook on a stable working environment in a typical type of office, where you are given tons and tons of work which has no end to it. I will not say that I won't end up in such situation. However, your future is in your hand, you determine your future, towards a brighter path or a dark side.
 
Baking has always been my passion. This has been to an extend that I feel so uncomfortable for not baking for a long time or even for not buying any baking materials or appliances to add on to my whole lot collection of them ( for your information, I have three full containers of them ). I have once told my parents in an education fair that I will like to take up a baking or culinary arts course, and to my expectation, they gave a no-no to me and started putting down my hope by saying that I can't be successful in that. Typical type of Asian parents I had. In spite of that, I have a strong believe in myself that one day I will make my dream comes true - I will run a small cafe. It will be opportunity for me to bake cookies, cakes, pies etc and I look forward for this day to come.
 
Chicken Pie  (taken from Min's Blog)
(I made 6 of the large pies, and 3 medium-sized)
 
Pastry:
  • 150 gm butter
  • 250 gm plain flour
  • 1 tsp sugar
  • 1 egg yolk
  • A pinch of salt
  • 1 tsp of herbs ( mixed / rosemary)100 gm yoghurt
Put all the ingredients, except yoghurt, in a mixing bowl. Rub butter into flour mixture until like breadcrumbs. Add in yoghurt and mix to a dough. Dough will be very soft so need to keep it refrigerated for at least 30 mins.

Filling
: 
  • 1 big onion diced
  • diced cooked potatoes
    mixed vegetable  * I use carrots
    Sliced button mushrooms
    2 chicken breast, diced
  • oil
  • ½ cup water
Seasonings :
  • 1 tbsp cornflour mixed with 2 tbsp water
  • 1 tbsp sugar
  • 1 tbsp oyster sauce
    salt n pepper to taste
  • Heat abt 2 tbsp of oil and fry potatoes until golden. Set aside.
  • In a clean wok, heat 2 tbsp oil. Fry the onion until transparent. Add mixed vegetable, mushroom, chicken. Add in potatoes.
  • Add in water and cook for abt 5 mins. Add in seasonings.
  • Add in the cornstarch and stir to thicken mixture. Cool and set aside.
  1. This dough is enough to make 6 half-cup muffin size pies.
  2. Roll out the dough, cut the size required and place in a pie dish. 
  3. Poke holes at the base using a fork. 
  4. Put 2 - 3 tablespoons fillings in. 
  5. Cut another piece of dough to cover the top. 
  6. Poke a few more times using fork on the cover of the pie. 
  7. Brush with 1 beaten egg. 
  8. Baked in a preheated oven at 180°C for 25 - 30 mins.

Leos, We ROAR!

It has been my second year serving as a Leo. From the moment I pledged to serve for the betterment of the community, deep down in my heart I felt the burning spirit to reach out to those in need. I has no regret joining Leo. I knew that I had made the right step into Leo and this has inspired me really a lot :) Many would prefer joining Leo because of their friends, or because it is cool ( whatever they think ).

Yes, I can proudly said I had carried out my responsibility duly as a Leo throughout the year of 2012. I joined various projects to contribute to the less fortunates and I was glad that I was able to bring joy and the warmth of love to them. These experiences were memorable.

On the 25 to 27 of May 2013,  I had the most fruitful three-days-two-nights at Glory Beach Resort, Port Dickson with all the leos form the multiple district of 308B1 consisting of leos from Malaysia, Singapore and Indonesia. It was a great platform for us to build a stronger bond between all the leos and to interact with each other. The theme talk ( Stay Driven, Stay Inspired ) had motivated me to serve and yet I promised myself that I would try my best throughout this fiscal year of 2013/2014. It will be a challenging path for me to balance between my co-curriculum activities ( both Leo and St. John ) and studies but nothing is impossible for me :)

Throughout the three days at PD, it was really memorable with all the fun and hilarious moments I had with my bunch of friends and my besties as well. We even seized the opportunity to bond with our seniors and juniors, not to forget Leos from other schools.

I live my life with contentment

So form four can be considered a fantastic yet disappointing year for me. Just like the proverb goes ' life is not a smooth sailing'. Yet you path to your dreams and future may be a winding one but you still have to roll on. 

I have been so busy for the past few months and especially during the exam months. The heavy workload I had causing me a trouble to strike a balance between studies and other activities. I knew thsi may be the only pitstop in my high school life to gain various experience which will leave unforgettable moments, however I still need to have a piece of mind to let go everything. 

From my friend's current experience, I knew that she was the exact same example as me. Sometimes you are not appreciated even when you put in all you effort for so many years but yet all your hardwork are vanished within a split of second. I am learning to let go certain things. Bottling up all my problems is casuing me trouble.  

High school life is always te most memorable one and I wont let anything to affect myself. Yes, moves on and everything will be fine :)

2013

Few days back, I have been wanting to blog on how well 2013 has treated me but what happened ytd and today have totally changed my perception towards this brand new year.

Turning into form four has been challenging. With ten subjects to manage including three sciences and two maths which may be pretty new to me, I find it quite hard to cope. Going to tuitions and school activities every single day are really tiring, at one point I really feel like giving up. Fortunately, I has the will and determination to carry on and get through all these hurdles. I'm pretty glad that I manage to get through them and still shine with my results although this is only the start if the year. I give myself the hope that this is a good start for my academic but I still need to put in lots more effort if I want to have great acheivements.

Secondly, co-curiculum activities have been also part of my life ever since I stepped into high school. If only you had known me well, I am those type who will practically put in all my effort and try my very best in anything I involve in. If I'm given a task or and even a minor post, I will do my best to avoid any disappointment. Honestly, I can admit that I'm nearly a perfectionist.

What happened ytd was indeed frustrating yet disappointing. Looking at my state camp results, I nearly have to urge to just shut the computer down and looking at it anymore. It has been my second year failing the knowledge of the order. No matter how much effort I have put in, I still fail the paper. I choose not to believe my eyes. I has thought of giving up this time but you know how hard it is to get through state camp. It doesnt worth giving up this year. I have gained a lot through camps since form one, from team spirit to independence :)
Many people may think that it is just something minor to acheive probadges, but to me, if I want to do it, I will do my best. It has been always my dream to be awarded as a Grand Prior although it may not be possible. I believe that I wont have any regrets if only I have did my very best.

I know I'm babbling a lot of my personal stuff today, but just let me finish this very last part of my post today. Today hasnt treated me nice as usual although it is the last day of school and I'm going for camp tonight which I dont really look foward to with all these conflicts troubling me.
In the midst of having chinese class after school, I was called for a meeting with my seniors. Miss X brought up this problem which we have tried to settle, and our seniors started questioning us as if it was totally our fault. Like seriously, no one wants this to happen, it is just a waste of money but do they even think of why Miss X even try to intefere our job and making such a big mess out of this. And when Miss Y was asked why she has made the decision all by herself when Miss X contacted her, she could even give a blank face and gave proper answer after being questioned thrice. All of us in the same department were questioned, and I, doing so much preparation from checking prices for every single items to all the paperwork was of course the one to speak out. As if it seemed to be I'm the one who has made all these mess. I wasnt even told abt the budget and they insisted that they have told us. I have no choice but to keep quiet, it wasnt a good idea to deny what they have said but knowing we have overbudget, I have tried to make ammends but this seemed not to bring any good.

Sometimes I realised how realistic the outside world could be. Although you know that you are treated unfairly, you have no choice but to bare with these. The tons of effort you have put in and the late nights you have sacrificed to make everything a success are not realised. People tend not to look at your effort but how close your relationship you have with them or even what post you held. All these which I have been facing for four years in this school have made made me feel very sick of and tiring as well. I know these 'challenges' may motivate me to stay tough but sometimes to people tend to act over their boundaries and thus instilling hatred deep down in my heart.

No matter what had happened, life still goes on...

Cashew Nut Factory
Doesn't worth visiting if you don't have the time. The cashew nut and all the other items like souveniers sold are marked at a high price. Takes us only 15 minutes to visit the factor, just to take a look at how they crack a cashew nut.

Big Buddha Phuket

It was drizzling on the day we visited Big Buddha. As you could see, Big Buddha is at the hilltop, the weather was chilly and would make you shivering in thin clothings. Luckily, I brought along my cardigan :) too bad that it's misty and there're some projects going on.

The scenic view from the hilltop is indeed breathtaking!
Do drop by the stalls at the roadside to buy souveniers made from seashells. They are so cheap and unique!

Happy New Year Eve!

2012 has been a great year to me. I cherish it and love it.
2013 will be a brand new start to me. New class. New subjects to study. New life :)
