Lemon cupcakes. This is my first try on this new recipe and I succeed! It's taste nice with light lemon taste and is fragrant. I doubled the portion of my recipe because someone in my house will finish up my lemon cupcakes. It serve best when it's hot and crispy on the top. The cupcakes doesn't have a nice outlook, but never judge a book by its cover. The recipe is really simple and you just have to spend a little time on it and you can enjoy a mouth-watering dessert. =D
Lemon Cupcakes Recipe
(from Something Sweet Cakes, Bakes and Desserts by Food Lovers)
- 115g butter
- 115g caster sugar
- finely grated zest 2 lemons plus 2 tablespoon juice ( I added more so it tastes better)
- 2 eggs, beaten
- 75ml milk
- 150g all purpose flour
- 1 teaspoon baking powder
- pinch of salt
Prepare and Cook Time: 40 minutes
Steps :
1. Prepare the oven to 190'c.
2. Put the butter and sugar in a large bowl and using a electric whisk, beat together until light and fluffy.
3. Beat in half the lemon zest, eggs and milk, a little at a time until well combined.
4. Sift in the flour, baking powder and salt and gently fold into the mixture until well mixed. Spoon the mixture equally into muffin cases.
